What's on the menu this week?
Using up the veggie tray from our Tiki Party Last night. Add some sesame oil, soy sauce, a dash of fish sauce, maybe a dash of mirin. Get crazy. Stir fry is whatever you want it to be! We've got peppers, celery, zucchini, broccoli, cauliflower.... it's gunna be good.
ZOODLES! (Zucchini Noodles) with pesto. I'll probably adapt this yummy zucchini noodles recipe. I love the concept of adding lemon juice to pesto to keep it really fresh tasting. I feel like i could eat an enormous bowl of these literal veggie noodles and not feel a single trace of guilt! I don't have a mandoline, but I got a fancy spiralizer for Christmas that makes really it really easy to twist the zucchini into spiraled noodles.
So I can't really find an exact recipe for this, but I'm going to adapt this crab salad recipe. I'm thinking maybe replace the celery with green peppers, and omit the roma tomatoes? And instead of putting it in a tomato, just serving it on top of a salad.. OH! or lettuce wraps would be good too. Anyway - I like the idea of using greek yogurt here with fresh herbs instead of really high fat and calorie options like mayo/sour cream.
