This week's Vegan Menu features a lot of products from Trader Joe's. Why do I love Trader Joe's so much? There's so much to love - It's a one-stop-shop for reasonably priced food with no artificial flavors/preservatives/colors, no genetically modified ingredients - just to name a few reasons. There's a shopping list at the bottom for your convenience :)
Vegan Pizzas - Layer a pita with pizza sauce, vegan mozzarella, and whatever veggies you want!
Sausage Pepper Bake - substitute vegan sausage from trader joe's and vegetable stock
Vegetable Coconut Curry
Quinoa Fried "Rice"
Baked Falafel w/ Greek Salad (no cheese!) - you can even stuff a pita pocket with the ingredients for lunch the next day ;)
