A lot of this plan relies on leftovers this week - that is my secret to success! A typical work lunch would usually consist of a sandwich or eating out, right? Well, that's not so easy when your food options are so limited. The way I stay on track is to cook one big meal and eat it multiple times. Don't be afraid to double a recipe, especially if you know you like it!

Roasted Veggies. Potatoes, beets, carrots, parsnips - might want to serve this with a side salad. Or just eat an enormous bowl of veggies like me :)
Herbed quinoa with nuts and cranberries - feeling adventurous? Try adding a side vegan veggie burger or grill up some veggie sausage!
Butternut squash soup (replace butter with olive oil, replace chicken stock with vegetable stock)
Taco stuffed zucchini boats (minus the cheese, sorry)
Homemade Tomato Sauce
Indian Food: no recipe here, but make sure you aren't ordering anything with ghee (clarified butter) or paneer (cheese). They usually have dishes made with vegetables, chickpeas, and/or potatoes that are vegan. Coconut milk is okay too, and lots of curries are made with this ingredient!
