Healthier Banana Bread
1/2 c vanilla protein powder
1/2 c spelt flour (can probably substitute other flours here)
1/2 c oat flour (I got this at Trader Joe's, but you can just pulse oats in food processor to make it)
1/2 c ground flax seed
1/2 cup plain yogurt
1/2 c honey
1 t baking soda
1 t baking powder
1 t vanilla
1/2 t cinnamon
pinch of salt
Mix all ingredients. Pour batter into loaf pan lined with parchment paper (or grease and flour pan). Bake in 325 degree oven for 30 minutes or until a toothpick comes out clean when stuck in the center.
You can also add nuts, dried cranberries, chocolate chips (yesssssssssssss) - go crazy. I won't be mad.
And my latest discovery - sugar free coffee syrup - also makes a delicious substitute for the honey here if you're trying to watch your sugar. Given that's a whole 'nother battle of the "is aspartame bad for you" conversation.... but we'll get into my thoughts on that another day ;)
