alright alright... I know it's been over a month since I blogged. Bad blogger. In related news I typed "Read my blob" instead of blog and couldn't stop laughing for like 3 minutes...
What to do with ripened bananas? SO MANY OPTIONS. Usually I just unpeel them and freeze to throw in a smoothie later. But this week I had an abundance, so it was a great time to make banana bread! Banana bread is so good - but normal recipes contain a ton of sugar and butter, and while they are delicious - they are not good for you by any means.
I don't think this recipe is perfect, but it does make very moist bread without any added oil or fat. Start with really ripe bananas - like about to go bad ripe - your bread will be sweeter this way.
Also - I feel like I've cheated with this recipe. And it feels so right. My new favorite kitchen item? Non-stick pan lining paper. It's like magic. Literally - no soaking the baking dish or trying to get the bread out of the pan without it falling apart.
Healthier Banana Bread
3 very ripe bananas
1/2 c vanilla protein powder
1/2 c spelt flour (can probably substitute other flours here)
1/2 c oat flour (I got this at Trader Joe's, but you can just pulse oats in food processor to make it)
1/2 c ground flax seed
1/2 cup plain yogurt
2 eggs
1/2 c honey
1 t baking soda
1 t baking powder
1 t vanilla
1/2 t cinnamon
pinch of salt
Mix all ingredients. Pour batter into loaf pan lined with parchment paper (or grease and flour pan). Bake in 325 degree oven for 30 minutes or until a toothpick comes out clean when stuck in the center.

You can also add nuts, dried cranberries, chocolate chips (yesssssssssssss) - go crazy. I won't be mad. And my latest discovery - sugar free coffee syrup - also makes a delicious substitute for the honey here if you're trying to watch your sugar. Given that's a whole 'nother battle of the "is aspartame bad for you" conversation.... but we'll get into my thoughts on that another day ;) |
