Not too many years ago, I recall an experience in the kitchen where my sister and I were deep frying something and once we were done, we still had this perfectly good hot oil we didn't want to waste. So we went on a kitchen hunt to figure out what else we could deep fry. Oreos, wonton wrapper stuffed with apples and raiIt was exciting and delicious, but left us feel pretty sick from all the oil afterwards.
Now I have a serious addiction to grilling. I have a charcoal grill, which takes a fair amount of time to get going, so whenever it's on, I try to grill everything I can get my hands on. Pretty much any veggie will do. I'm also a huge fan of grilled pineapple sprinkled with cinnamon. Or you could do peaches when they come in season... there are just so many possibilities.

Grilled Zucchini, Asparagus, and Salmon
This is probably one of the best/easiest prep meals ever. I love grilled anything (and everything) but it’s kind of a pain to put everything on skewers or to clean another dish for the grill basket. This meal is a great go-to that is 1. Healthy 2. Easy 3. Delicious.

So easy enough, just cut the ends off your zucchini and slice once down the middle the long way. Then, snap the ends off the asparagus spears. Veg prep: done.
Sprinkle salmon, zucchini, and asparagus with olive oil, salt, pepper, garlic powder, and onion powder. Also sprinkle salmon only with dill weed and squeeze ½ lemon over your fish. No measurements here – just give everything a light and even sprinkle of each ingredient. Then throw everything on the grill at once – everything will take 8-10 minutes to cook (depending on your grill). Veggies are done when they are tender (easily pierced with a fork) and salmon is done when it flakes easily. Don’t overcook the salmon – you can always throw it back on the grill if it's not done enough for you!
Cook quinoa to package description – but instead of water use vegetable stock (gives tons of flavor). You can also serve this with rice, but I think the quinoa pairs really well.
This meal is sure to please. Tons of flavor, low in fat, high in deliciousness.
