I have a big sweet tooth. I’m actually positive that if I didn’t eat as much sugar I’d probably lose another 1% of body fat and have amazing abs. But the reality is that I don’t starve myself or deprive myself of something I really want. And I really want cake.. chocolate… ice cream… cookies…. Peach cobbler. You name it.

Chocolate Peanut Butter Brownies
2 C Black beans
1 T Melted Coconut oil
1/2 C flour
1/4 t salt
1/4 C Cocoa Powder
1 t baking powder
2 T Maple Syrup
1 T Vanilla
3 T Natural peanut butter
1 ripe Banana
½ C Chopped walnuts
½ Lindt Dark Chocolate Bar, chopped
2 scoops chocolate protein powder
2 C Black beans
1 T Melted Coconut oil
1/2 C flour
1/4 t salt
1/4 C Cocoa Powder
1 t baking powder
2 T Maple Syrup
1 T Vanilla
3 T Natural peanut butter
1 ripe Banana
½ C Chopped walnuts
½ Lindt Dark Chocolate Bar, chopped
2 scoops chocolate protein powder
Soak beans overnight. Cook in water for about 2 hours (or until soft). Drain and thoroughly rinse beans. Immediately add to food processor with all ingredients except for walnuts and chocolate. You want the beans to be hot so they “melt” the other ingredients so everything mixes easily. Puree the mixture until it’s smooth. If it looks too thin, add some flour - too thick, add water. Then add chopped nuts and chocolate and pulse a couple times just to mix.
Remove mixture from food processor and place into a foil-lined 8x8 dish. Bake in a 350 degree oven for about 25 minutes, or until the brownies are set.
These brownies are choc-full of protein! Which makes it super-filling and satisfying for those sweet tooth cravings. Brownies will keep in the fridge for about 7 days (if you don’t eat it all before then!)
